What to do with a Glut of Zucchini
Ok here’s the deal..

WOW!! That's A Lot
EVERYONE and his dog has had the MOST enormous harvest of zucchini on record this year, you can’t GIVE them away. When you go to say ‘Would you like…’ people run a mile, so what DO you do with several kg’s of zucchini?
Our harvest this year was also enormous, in more ways than one, I had booked a market stall at a local food & wine festival, and I was left in a difficult position of do I harvest now and risk loosing the small zucchini before the market or do I leave them??
Well, I left them and they grew and grew seemingly mammoth proportions daily, some were So big they wouldn’t fit in a cardboard box!!
We went to the market and thats when we found out EVERYONE had spectacular zucchini’s, and didn’t know what an earth to do with them.
So when we got home, we raided the recipe books and found recipes galore for zucchini in a multitude of different ways, a bit like that turkey at Christmas!!

We Had Some Whoopers!!

zucchini pasta
zucchini soup
zucchini fritters

Guess who!!
We had lots of zucchini this year as well (northern hemisphere). I was eating them everynight with some summer squash and ground pepper and I never got sick of them. One of my favorite vegetables, I must say.
Anyways, when we wanted something other than plain zucchini, my mom always made zucchini bread which was absolutely AMAZING! She also has a recipe that she refuses to share with me for a zucchini pie. It tastes just like apple pie when you’re finished, only there’s more filling and they’re much easier to come by. And you can freeze it for future pies and other recipes.
Just a thought.
